Slected oak :
The supplies of oak for the Tonnellerie Doreau come exclusively from high forests. Thierry Doreau regularly visits his suppliers and the forest themselves in order to personally select the oak. the quality of the oak is a vital factor in providing the complexity, aromas and tannins required in barrel maturation.

Natural seasoning :
The selected oak is split and fashioned into stave wood witch is then seasoned in the open air at the Tonnellerie Doreau's wood-drying site. The oak staves are exposed to the actions of sun, wind and rain for 18 to 24 monthes. When fully seasoned, the staves are ready to be made into barrels: at this stage, the oak fully reveals its qualities after toasting and subsequently during the maturation of the wines and spirits
